“For me, this menu is a way to relive the best moments of our travels,” says Piscazzi. “It’s about simplicity, tradition, and of course, a bit of innovation.”

The food isn’t the only highlight. The hotel’s new Wine Director, Jan Konetzi, brings a serious dose of expertise and flair. With over 20 years in Michelin-starred restaurants—including those of Gordon Ramsay—Jan has a talent for choosing wines that surprise and delight.
