Ingredients:
- 2 chicken breasts
- 1 tablespoon olive oil
- Salt, pepper, oregano (for seasoning the chicken)
- 1 large tomato
- 1 cucumber
- 1/2 red onion
- 100g feta cheese
- 10-12 olives (preferably Kalamata)
- 1/2 cup bulgur (optional)
For the dressing:
- 3 tablespoons olive oil
- Juice of 1 lemon
- 1 teaspoon dried oregano
- Salt and pepper
Instructions:
- Prepare the chicken:
- Rub the chicken breasts with olive oil and season with salt, pepper, and oregano.
- Grill or pan-sear the chicken until fully cooked (about 5-7 minutes per side).
- Once slightly cooled, slice the chicken into strips or small pieces.
- Prepare the salad:
- Slice the tomato, cucumber, and red onion thinly.
- Crumble the feta cheese.
- If using, cook the bulgur according to package instructions and let it cool.
- Assemble the salad:
- In a large salad bowl, mix the vegetables, feta, and olives.
- Add the grilled chicken (and bulgur, if using).
- Make the dressing:
- Whisk together the olive oil, lemon juice, oregano, salt, and pepper in a small bowl, then drizzle over the salad.
- Serve:
- Serve the salad with fresh bread or rusks for a more filling meal.
