Ingredients:

  • 2 chicken breasts

Mediterranean Salad with Grilled Chicken

Instructions:

  1. Prepare the chicken:
    • Rub the chicken breasts with olive oil and season with salt, pepper, and oregano.
    • Grill or pan-sear the chicken until fully cooked (about 5-7 minutes per side).
    • Once slightly cooled, slice the chicken into strips or small pieces.
  2. Prepare the salad:
    • Slice the tomato, cucumber, and red onion thinly.
    • Crumble the feta cheese.
    • If using, cook the bulgur according to package instructions and let it cool.
  3. Assemble the salad:
    • In a large salad bowl, mix the vegetables, feta, and olives.
    • Add the grilled chicken (and bulgur, if using).
  4. Make the dressing:
    • Whisk together the olive oil, lemon juice, oregano, salt, and pepper in a small bowl, then drizzle over the salad.
  5. Serve:
    • Serve the salad with fresh bread or rusks for a more filling meal.
